Get back on track
Had a super decadent weekend of meeting up with friends and family which resulted in lots of eating. A lot more oil and sweets and delicious cakes than usual. To get back on track, threw together my go-to @bakeryonmain Multigrain amaranth creamy hot breakfast 🥣. I added some goji berries for an extra antioxidant boost and topped it with blueberries and little furry bananas with a sprinkle of granola. Sweetened this with @gerber applesauce.

All-time favorite!
A power-packed warm and filling breakfast of @purely_elizabeth superfood oat porridge with organic quinoa, hemp, chia and flaxseeds, topped with handfuls of blueberries, goji berries, raisins, @wildernesspoets small batch raw almond butter, raw eucalyptus honey, and leftover @gerber applesauce

It may sound like a lot but it literally took 5 minutes to put together. I don’t take more than 10 minutes to pull breakfast together unless it’s the weekend and someone else can watch the baby. 
That doesn’t mean breakfast can’t be nutritious, hearty, and all-round good for you. This goes into my list of favorites. Will be making it again soon!

What I Ate Wednesday...2 days later  Made chilli since I’d been craving it so much lately. I’ve found in this pregnancy I’ve had more of a savoury than sweet tooth and I’ve definitely been craving more spicy things also. This was made using fresh 5% fat steak mince, passata, tomato purée, garlic, paprika, soy sauce, cumin, crushed chillis, mild chilli powder, an oxo sprinkled over and the smallest sprinkling of sweetener with some red pepper and grated carrot mixed through for some crunch. Served with basmati rice. Was so nice but it lacked something and I’m not entirely sure what it was as I use the same ingredients but something was missing. I still ate it and it filled a hole though! What’s your favourite thing to cook lately?

I typically start off with some premier protein (caramel is my fav!) after my workout  Then I’ll have some snacks ready to eat for mid morning. This week I have the Chobani yogurt drinks, Sargento packs, and some pop secret popcorn  For lunch I brought nachos and for my afternoon snack I had some chobani yogurt w/ honey  & cheez it’s  Dessert this week is the chocolate strawberries  with whip. .

I wasn’t feelin like having a meal for dinner this week, but instead got my protein in my adding some bacon 🥓 (so dang good). What was your day of eating like?!? Let me know

#wiaw Today was a BUSY day!  Meal time is always a challenge when I don’t meal prep my own meals, but I feel like I did ok!

Breakfast: (meal prep) Frittata with clementine oranges and grapes

Lunch: (on the go) stopped at @albertsons to find something remotely healthy and found this nutritious #freshtakefamily meal with Salmon, rice, and carrots in a garlic herb caper sauce.
.
Snack: (also from Albertsons) grabbed a couple of @chomps meat sticks and an apple. The jalapeño beef flavor delicious! And #chomps doesn’t have any hidden nasties (no GMOs, sugar added, gluten, dairy, soy, MSG, nitrates/nitrites, etc.) #winning

Dinner: (made at home) applewood smoked pork chops with a side salad and Mac-n-cheese.

Now to get some last minute work done and off to bed! Not pictured: my iced latte and a banana  there’s nothing too ground breaking since I posted my dinner last night (which ended up my lunch today) and I have the same breakfast like every morning! Not the most perfect day of eating for #whatiatewednesday but that's what real life is like, a little imperfect and messy. Sometimes you eat weird things to fit your macros and sometimes you don't eat weird things and could have done a better job of eating macros. But as long as you don't outright cheat, you're maintaining a healthy relationship with food, and you stay in ketosis... you WILL see positive results.

Ugh I'm sorry guys life got crazy today and I had a gagillion meetings and then went out with coworkers. So far for #whatiatewednesday I've had breakfast and lunch, plus a 5% Greek yogurt with hazelnut meal, went out for happy hour but only had seltzer (because keto's got my tolerance so embarrassingly low I can't drive after 1 drink)... and now I'm having this avocado (not fried), sour cream, and salsa all mushed up like guac and eaten with a spoon. I still love you fried avocado, but I ain't got time for you today.

It’s a new day, a fresh start, and another chance to nourish your body.  I’ve been playing with occasionally removing coffee from my morning routine to support my adrenals, especially when I feel extra overwhelmed, and anxious. This strategy has helped me remove the “need” for coffee in the morning, and I really savor the cups I do have - as was the case this morning.  Today, I added some @greatlakesgelatin collagen, cinnamon, cordyceps, and a bit of @nutiva coconut oil. Most importantly, I drank my coffee slowly and away from my computer so that I don’t start my day stressin’ out.

The other day, I polled you all on Instagram stories, “What would you like to see more of?” ​The most requested content was What I Ate Today posts!  You want me to bring them back! Before I got pregnant, I would do weekly What I Ate blogs where I'd list (with photos) everything I ate the day before the post. Very simple, nothing fancy - just literally, what I ate that day. ‍ I don't include the little spoonfuls and finger licks of the food I cook all day long for Luca, though!  It's been my greatest joy yet as a mother to feed my son solid foods. I'm having a blast over at @inspiralizedkids! Happy Wednesday! I had to share this super easy 30 min meal prep with you!
Turkey meatballs
Preheat oven to 400 degrees
1 lb ground turkey 
1 glove minced garlic 
1/2 onion, chopped 
1 egg 
1 tsp of each, Salt, pepper, Italian seasoning 
1/3 cup of grated parm
Shape into meatballs & bake for 20 mins
While meatballs are baking, prep containers with fresh spinach
Sauté cauliflower rice with veggies of choice(I used frozen corn & bell peppers)
Evenly divide @greengiant (found a huge bag @costco_doesitagain)Cali rice, and pop 3-4 meatballs into each container, top with marinara sauce & parm!
If I’m super short on time I use frozen turkey meatballs which aren’t as good as the fresh ones but they still work & you can do this meal prep even quicker!

I was inspired by @rachaelhartleyrd to do a WHY I ate Wednesday so for breakfast today, I combined all three food groups to create a satisfying and filling meal. Protein and fat from the @365bywholefoods peanut butter + whole grains from the @highstphilly buckwheat cherry bread + some added fiber/ vitamins and minerals from the banana Usually I eat more for breakfast, but I wasn’t feeling very hungry, so I listened to my body and ate something that I knew would hold me over until lunch

Irgendwie mag ich ja die Frühschichten. Zwar muss man immer so früh aufstehen, hat dannach aber noch so viel Zeit Dinge zu erledigen. Laufe meist auch nachhause #mehrbewegung was ca. 1h Weg ist. Auch bei 35° denn ich merke dass es mir richtig gut tut, da man den Kopf frei bekommt.

@sidsuicide @princessnatkins it’s a hard disease to understand. I don’t even know how to explain most of it myself. Basically my connective tissues are like silly putty instead of the normal elastic/rubber band-like ones everyone else has. This causes fatigue and pain to set in faster for me. There are some good short videos on YouTube about it. There aren’t any really good organizations or websites with info. It’s easier to understand from someone who has it explaining its effects on them. It’s different for each of us. Mine was mild when I was first diagnosed at 25, despite having it all my life and having chronic pain, then it ran rampant out of nowhere within the last 2 years or so. It got a lot worse after my sexual assault last year.

For full honesty and being transparent I 'indulged' at two points today:
1. I should not have had chex mix as my carb but it happened.
2. I had a glass of wine after dinner because somedays you just need a glass of wine.

🥣Overall I'd give myself a 7.5/10 for the day. Not bad. Could be better. But not bad.

This right here is sooo good! It is by far my fave breakfast and can be made the night before! I generally make a few at a time for an easy grab and go breakfast for work. .
Here is my recipe:
1/2 cup unsweetened almond/coconut milk
3/4 cup plain Greek yogurt (I like organic Stonyfield)
2 T chia seeds
1/4 cup steel cut oats
A few dashes of coconut extract
Top with 1/2 a banana and unsweetened coconut flakes. (I add the topping right before eating)

Growing up, I absolutely loved baking with my siblings. In between episodes of Hannah Montana, you could find the three of us in the kitchen preparing a boxed brownie mix or getting gourmet with our own questionable concoctions.
Yesterday we were able to relive those memories (with much higher quality ingredients) thanks to @foodstirs! We turned on my late 2000s throwback playlist, gathered the three (!!) ingredients required, and whipped up some of the simplest and most delicious cookies I've ever had.

It's easy to talk about #whatiatewednesday, but let's try #whyiatewednesday today! (Thanks, @thewellful ) like everyone in the world, I live for pasta. I decided to add one when I was meal planning this weekend and then I saw this porcini mushroom tortellini at @aldiusa, and it was a match made in heaven

So why I ate this particular dish has a few reason. I just  tortellini. And mushrooms. And tortellini used to be a bad food! Because it's full of energy-giving carbs and fairly calorie dense. But hey, I went hiking this morning so I needed lots of energy! And it's been raining all day so I wanted some warm comfort food I could scoop up into a bowl  paired with pesto and more sauteed mushrooms and zucchini, this was one great dinner (no extra protein necessary cause I had a high protein lunch)

Next time you eat something, think about your intention. Think about why! Are you hungry, are you going for taste, are you going for energy, or do you just feel like you should eat something out of boredom or obligation? See what you learn about yourself.

My #whatiatewednesday dinner looks really fancy, but actually it's just a lazy man's broccoli cheddar soup (aka chopped up frozen->roasted broccoli in a cheese sauce). And wine because I felt like it and read a dubiously-cited article today about how wine makes you skinny. 🤣 #

Roasted frozen broccoli is sooo easy and completely underrated. All you gotta do is mix a bag of frozen broccoli (Whole Foods organic is our favorite) with some garlic, olive oil, and salt... Then bake in the oven at 400 for 15-20 minutes (convection gets things extra crispy but lower temp to 375). Cheese sauce is 1tbsp butter, 1tbsp heavy whipping cream, and 1/4 cheese (I used a fondue mix tonight but other favorites include cheddar and parmesan).

What I Ate Wednesday! 🥘 Tonight I was in the mood for veggie pasta. I usually always have some sort of meat in my meals but I just didn’t fancy it tonight. This was pasta, passata, tomato purée, garlic, mixed herbs, oregano, thyme, oxo cube, sweetcorn, broccoli, carrot and garden peas. Was so good and so filling! And also very healthy!

When you have an off day - let's say I eat vegan food in a restaurant for dinner which, unless I only stick to salads leave me hungry - is usually carb heavy (and not the good carbs), I notice it immediately the next day as bloating and heaviness. .

#whatiatewednesday Noatmeal with heavy whipping cream for afternoon snack. I've posted this recipe like a million times, but it's go-to gold for a #vegetarianketo work snack (I mix it up on #mealprepsunday and then add water and microwave for 60s). This week I changed it up by adding pumpkin pie spice.
Lately I've found my hunger has decreased (calorie burn decreases with weight loss) and I no longer need a morning snack. So instead I've been alternating noatmeal and greek yogurt as my afternoon snack, and I'm really appreciating the variety.

I realized I've been kind of neglectful by not including my #vitamins as part of #whatiatewednesday. Honestly, I probably take more vitamins than I need. But as a vegetarian you can't be too careful, and it's cheaper to take the vitamins than get tested multiple times a year (I still goes as often as insurance allows). If I had to choose just 3, I'd pick iron, B vitamins, and magnesium. Literally everyone should take magnesium (glycinate is the most effective form), but iron and B complex is super important for vegetarian health and energy. *****Here's the breakdown****
Morning: B complex (energy, anxiety), iron (energy), electrolyte pill.
After lunch: K2 (improves insulin sensitivity, disease prevention), D (my office doesn't have windows), zinc (immune system booster- my coworkers are always skck), and Krill oil (see below).
After work: @goultima electrolyte powder
Before bed: magnesium glycinate (cramps, sleep quality, anxiety, and more) and probiotics (healthy belly!)

Wait what!!!! I thought you were a vegetarian, what's up with the Krill? I'm glad you asked. I have been a vegetarian my entire life, but recently made this one exception for a bit of fishy oil. Its actually the only animal product that doesn't make me physically ill. Why? There is no vegetarian substitute that is quite as effective (flaxseed oil is closest), and omega 3s are incredibly important for your health, and even more so on #keto. Omega 3s aren't just about getting a certain amount, they're about maintaining a healthy ratio of 3 to 6. The more low quality fat you eat, the lower the ratio. That's also why grass fed dairy/meat is so so much better for you than grain fed- the omega 3 ratio is higher. If you found your triglycerides got worse after starting keto, it is likely due to an omega 3 imbalance.
*** Krill also has a red pigment called astaxanthin, which helps fight inflammation (even PMS cramps!) and promotes joint health. With my family history of arthritis, I take that benefit pretty seriously.

For the Ultima packets, you can get individual serving sizes in the Whole Foods supplement isle which is a great way to try new flavors. My favorite is lemon because it has the least sweetener and tastes more like lemon water. I drink it with water or iced tea for an Arnold Palmer.

Here's my super boring lunch salad because I'm a creature of habit and also I love salad. #whatiatewednesday I topped it with my homemade Mexican crema which is super easy and delicious. Just sour cream, Mexican seasoning, and lime. Sometimes I add garlic and cilantro and blend it up if I'm feeling feisty.
