You can do more outside, go on vacations, eat stacks of waffles covered in roasted peaches, the possibilities are endless. What’s your favorite season?

For the roasted peaches: Pre heat the oven to 450. Slice the peach in half and remove the core. Cut into slices and cover with @chosenfoods avocado oil spray and cinnamon. Leave cook for about 20 minutes. For the waffle: Add cinnamon to the mix with coconut milk and you can take it from there  #losingitwithmelissa —-

To make, I sauté the kale in some olive oil first, add the kale, then pour in the tomato sauce along with the fresh tomatoes and labneh. Cover and cook for 3ish minutes or until eggs have just begun to set (check to see that whites are cooked but yolk is still runny). Top with cheese, parsley, pepper, crushed red pepper — or anything your heart desires! I also have a Shakshouka guide on the blog if you are lost!

Now, I won’t weight myself  not yet. But inches are coming off and I am impressing the shit out myself with my upper body strength and growth

Hips: -1.75”
Waist: -1” 
Arms: -1.25”
Legs: -1”
Chest: -1.5” (big boobs are shrinking!!! YASSS!!!)

I’ve Mmmm squeezing all the skin-boosting anti-inflammatory foods in today : beets, turmeric, almond flour, water-filled fresh veggies, cabbage, and fermented miso. How is this the first time I’ve tried this gorgeousness? I try to cook a ton of sides at the beginning of the week and add as much color as possible. I threw some beet hummus I made with roasted @lovebeets, turmeric cauliflower with @spiceology turmeric, cumin, and cardamom, @organicgirl arugula, some watermelon radish from @wholefoods, and purple radish I sautéed in miso and olive oil in a @thepagel_ paleo bagel and call this thing nirvana️

Ok guys, here’s the deal with Kelp noodles. If you’re very sensitive to texture, these may not be for you. They are very crunchy and at first made me feel like I was eating some sort of insect. Moving on from that, though. Anyway, I ended up really enjoying this dish I made for lunch today and am definitely going to give Kelp noodles another shot (virtually licked the plate clean after getting over the insect-like crunch lol and jk...kinda). Very easy lunch; kelp noodles sautéed in low sodium soy sauce with garlic powder, baked tofu and sautéed spinach. The noodles only contain 2 net carbs per serving so are certainly great “bang for your buck!” Can’t wait to try them on a salad. Go find these and put them in your mouth ASAP  ...this has to be one of the most DELICIOUS things I've ever eaten – say hello to the Honey Mango (ataúlfo/champagne mango) – if you've eaten this before you'll know what I'm talking about! If you haven't, the season is short so keep an eye out for them quick! The velvety golden flesh is so smooth, it just melts in your mouth and the taste! Intensely sweet but not overwhelming... I can't believe it's taken until now for me to have eaten one 🤦‍️ next year I'm going to make ALL the honey mango dishes!

 Elderberry syrup is one of my most tried-and-true tricks for keeping our familyi immune system on point! And I don't just use it during the cold and flu season, but year round! Elderberries are naturally high in immune-boosting compounds and studies have shown that they can actually help you bounce back  quicker from an illness. While elderberries can be used in a variety of ways, my personal favorite is this simple elderberry syrup.  While you can buy it in the store, but it can be  and making it is *so easy* and so much cheaper....especially since you can use that wonderful Instant Pot to do it!

My lunch today is really making me happy! The kale and cabbage salad that keeps on giving (seriously this salad I prepped is gigantic), turmeric eggs, apple, brazil nuts, olives. etc. So easy and sooooo yummy  . .

Does anyone actually want another kale salad recipe? Cuz this one is pretty  if I do say so myself  . It's full of nuts and seeds and a tahini dressing and flavor and it comes together pretty quickly. If you're interested, let me know in the comments and I'll write it up! Does anyone actually want another kale salad recipe? Cuz this one is pretty  if I do say so myself  . It's full of nuts and seeds and a tahini dressing and flavor and it comes together pretty quickly. If you're interested, let me know in the comments and I'll write it up! Our last meal in #Vancouver before we head over to Edmonton!  By very popular recommendation, we visited @medinacafe (getting there right at 8am to ensure we got a seat). They had me at coffee & waffles. ️ A very intense brunch — I should have stopped there but we ordered a main dish too.  I think I need a week detox after this trip. So. Much. Food.

Quite nervous today as going to a Chinese buffet tonight with my family- feel like when I know I am going to a buffet/ out for dinner the unknown calories and portion sizes (generally the lack of control) trigger me, so going to try my hardest to eat what I want without fear or guilt!

For me, it’s a YAY all the way  In fact, one of the first recipes that I ever shared on the blog was a Caramelized Peach & Goat Cheese Salad and, to this day, it continues to be one of my all-time favorite summer dishes!  I meaaaan fresh, juicy farmers market peaches marinated in honey balsamic and sautéed to sweet, caramelized perfection.. how can you go wrong?!

The other day I made a modified version of the original using ingredients that I had on hand and it turned out just as good (if not better?!) than the original 🤩 I never thought I would find a combo that I loved more than caramelized peaches and goat cheese, but caramelized peaches and creamy ricotta is definitely giving it a run for its money

Even if you’re not a fruit-on-salad kinda person, promise me you’ll give these caramelized peaches a try  Mix them into yogurt, toss them on some chicken, eat them straight from the skillet.. whatever your little heart desires! But whatever you do, just be sure to do it soon before peach season is over

I’m feeling all over the place. This definently is because I have so much to do in the next week and a half that I have been putting off and I also have to socialize with people I haven’t seen in forever and go to doctors appointments and basically do EVERYTHING.

I am trying to remind myself that although I have everything to do, I don’t have to do everything RIGHT NOW. it’ll get done. it’ll work out. it’ll be fine....it’s a lot easier saying that than actually believing it.

All my life I have had a tendency to constantly worry about all the things that I need to do and deadlines fast approaching that I missed out on the present moment.

While I have a lot to accomplish, this is almost my last week and a half in the states for a YEAR! I want to enjoy it! I want to be present and soak in every moment, good meal, and cuddles with my dog.

My mind is running a mile a minute but every once in a while I am checking in with myself. Taking a deep breath or two...or five and just being.

Made a thai inspired rice and veggie bowl for dinner tonight. I’ve been loving this lately. So good and fresh. To make this you cook some rice, I did half rice and half quinoa. Quinoa is higer in protein and fiber then rice and keeps you fuller for longer. Then you chop up the veggies (carrot, red cabbage and lettuce) and fruits (avocado and mango). Add some edamame beans (I forgot to put them on) Top it of with sprouts, peanuts, sesame seeds and a little soy sauce. Hope y’all are having a good day so far!

These past few weeks have been turned into one big Sunday and I’m totally ok with that.  I even made some zucchini overnight oats in our Seville Airbnb this week.  However, if there was one thing I could pack up and bring on the road with me it would def be a blender.  Life just isn’t the same with out my regular smoothie bowl fix. -
So here’s a little throw back to these banana, coconut, chia seed smoothie bowls because dang will these bowls make you go bananas for brekkie bowls! -
Chia pudding: add 1C coconut milk, 1/4C @nutiva chia seeds, 1/4C @co_yo_usa , 2tbsp maple syrup, 1/2tsp vanilla extract, cinnamon to a blender.  Blend and let sit in the fridge overnight. 
Smoothie bowl: 3 frozen bananas and chia pudding to a blender and blend.  Top with @purely_elizabeth granola, berries and anything else you may want to serve.

Happy Tuesday  from MV We have some guests visiting this week, and I made this big salad as part of dinner last night  Arugula with fresh peaches, tomatoes, corn, basil and goat cheese  Paired with grilled veggies and grilled salmon - perfect meal! 
To make the salad (this made enough for 8): Slice 3 ripe peaches and chop 4 tomatoes. Steam 2 ears of corn, let cool and use a knife to slice off the kernels. Chop a few large handfuls of basil. Add everything to a large bowl with a few tsp lemon zest, salt, and a generous drizzle of olive oil and balsamic vinegar. Add 5 oz package of arugula to a large bowl or platter, drizzle with a little olive oil and top with the peach/tomato/corn mixture and a generous sprinkle of goat cheese 🧀

1 bunch organic carrots, tops removed
1 Tbsp coconut oil
1 tsp greek seasoning
Chimichurri
.
Cut off the bottom 1/2 of each carrot, then cut the top 1/2 lengthwise in 2, creating 3 equal pieces from each carrot. Toss the pieces in coconut oil + seasoning. Lay pieces on a baking sheet, flat side down. Roast at 410F for 15 minutes. Remove from oven, plate and top with chimichurri (recipe in previous post) 🥕

Note: save the tops to make pesto or add to a vegetable stock.

RECIPE BELOW You're going to want to try this amazing vegan chocolate tart, I made it for a dinner party and it was so easy!!
Ingredients:
 320g shortcrust pastry sheet (Jus-Rol is vegan)
 180g medjool dates, pitted
 400ml can of coconut milk
 1 tsp vanilla extract
 3 tbsp coconut oil
 200g vegan dark chocolate
Method:
Roll out the pastry and line a tin. Cover with greaseproof paper and baking beans then cook for 15 mins at 180 degrees. Remove paper and baking beans and cook for another 15 mins. While the pastry cools, soak the dates in some boiling water for 5 mins then blend along with the vanilla extract and 150ml of coconut milk. Pour into the pastry and chill for 30 mins. Heat the remaining coconut milk and melt the chocolate and coconut oil before mixing together. Spoon the mixture into the pastry on top of the caramel layer. Leave it in the fridge for 4 hours to set then top with strawberries (optional).

I’ve yet to jump on the “breakfast salad” trend but these spinach pancakes were a good start. Blended coconut milk with spinach and a few other goodies making these cakes taste nothing like spinach. But now Joel and I can say we had salad for breakfast.

Spinach Pancakes:
* 1 cup pancake mix
* 1 cup unsweetened coconut milk
* 1 egg white
* 5-7 drops liquid stevia (or other sweetener)
* Cinnamon
* Handful of spinach
Toppings:
* 1/3 cup blueberries * Vanilla yogurt * Peanut butter syrup drizzle (1 tablespoon melted PB + 1/4 cup maple syrup)
Directions:
* Blend spinach, coconut milk, egg white, and sweetener together in a high speed blender. Continue blending until the spinach is completely smooth.
* In a medium size bowl, whisk together pancake mix, cinnamon, and liquid until smooth. * Heat a flat skillet, spray with cooking spray, and pancake. (Should make 8 pancakes)
* Stack the cakes, top, and enjoy your breakfast salad.

Never a sad desk lunch when @perfectbar is involved 
Just tried this flavor for the first time and IT IS SO GOOD seriously might be better than the PB chocolate chip which i did not think was possible.
@perfectbar is the original refrigerated protein bar and contains 20g of protein from whole food ingredients. It is one of the only snacks that really gets me through that 3pm slump.

Strawberry shortbread chia pudding Kind of my spin on a summer dessert, for breakfast, because the berries I got at the farmer’s market over the weekend were too delicious to resist. Also had a leftover cookie in the fridge, and thought it looked a little lonely.  So this morning I have a mixture of almond milk, chia seeds and shredded coconut, along with my paleo shortbread topped with @sunbutter, juicy local strawberries, and extra seeds on the side. Ferment time. I fell in love with ferments after reading The Art of Fermentation by Sandoor Katz. It's a great read if you're interested in fermenting but are nervous or otherwise hesitant to begin. 
In addition to the amazing complex flavors of fermented foods the health benefits are numerous. To name a few, fermented veggies aid in detoxification, help make nutrients more available to your system and help boost your immune function. 
I try to eat something fermented everyday. If you want to get started sauerkraut is an easy place to begin. You can begin eating your Kraut in as little as a week after preparing. The warmer your place, the faster the ferment will evolve. With fermentation, unlike canning, there is no need for sterilization. Just make sure your equipment is clean.(washed with a mild soap) Another beautiful aspect of #fermentation is that it produces a selective environment that actually excludes harmful bacteria. In terms of vegetable ferments, just submerge your veggies in brine and you should be good to go. 
Alright peeps, Lets turn cabbage into Kraut
.
Kale Kraut 
1/2 medium sized cabbage 
1/2 tsp true sea salt( like @redmonds) 
A couple leaves of kale
10-12 oz glass jar with tight fitting lid

1. Finely chop your kale and cabbage and place into a large bowl. 
2. Sprinkle salt on the top.
3. With clean hands begin to work in the salt by pressing and mixing the cabbage.
4. After 5-10 minutes your cabbage should look less glossy and almost translucent.(Check my stories for visual reference)
5. If your cabbage has produced a bit of water at this point you should be ready to pack it into your jar.
6. Press the cabbage into the jar.
7. Your goal is to submerge the cabbage completely under its own brine.
8. Once packed place the lid on your jar.
9. Leave you cabbage in a room temperature place anywhere from a week onward. As long as mold doesn't develop your Kraut should be good. If you want a more sour Kraut leave your jar out longer. For a milder Kraut move to the fridge after a week or so. 
Notes
If your Kraut looks like it is darkening on the top it's likely ok. This is just a sign that some air has gotten to your Kraut.

Recipe:
🥒 2 courgettes
🥒 1 egg
🥒 1 can of tuna, drained
🥒 80g self raising flour
🥒 Coconut oil
Grate the courgettes and add it along with the egg, tuna and flour to a bowl. Mix well then heat some coconut oil in a pan over medium heat. Spoon a bit of mixture into the pan and fry on both sides until golden.
