Back to some higher intensity workouts this week after nearly 2 weeks of just walks & swimming/whatever vacation activities came my way— that zip line/ropes course was pretty intense. Went back into the gym on Monday not sure how I’d feel after so long off. But I gave myself 100% permission to work out as long or short as I wanted to. It feels so good to move freely! #freeexercise #freethemovement

A lot of people ask me if eating 6 smaller meals a day is the key to weight loss. This unfortunately promotes the idea that “snacking” instead of eating real, full meals is better to lose weight. The reality is that snacking here and there - and handful of nuts, a piece of bread, a bite of a cookie ADDS UP. Additionally, eating while standing/walking/driving makes it unlikely for your brain to fully register that you’re eating to satisfy hunger. .

If I’m going to have a snack, it’s going to be a mini meal - that being that I will SIT down and eat it. All three macronutrients will be present, there will be some micros (a fruit or vegetable) and it will be at least 250-350 calories. It gives me time for my brain 🧠 to process and register I’m eating and for me to recognize when my hunger signals are truly satisfied (I went back for more @somersaultlife after this plate!). .

If I’m in a pinch - and have to grab something, it’s likely to be an @rxbar , @perfectbar , @elementalsuperfood or @munkpack cookie. Yet I still SIT and eat it. .
.
So slow down. Eat your snacks and make sure they’re ENOUGH to satisfy !

Now this is definitely something I can get behind  @i_weigh and the #iweigh challenge. I am so much more than a number. I purposefully don’t weigh myself often because I focus so much more on how I feel to tell me if I’m healthy - a number can’t tell you the hard work you’ve put in towards your dreams, a number can’t tell you the people’s lives that you have personally impacted, a number can’t tell you who you are.

Gum surgery update: I lost a piece of suture last night & freaked out. Usually not supposed to happen so I went to see the doc today. Turns out everything that needs to be there is still there & I'm healing well...such a relief! As you guys may know, I am all for health, but I would be lying if I told you guys that I don’t eat any sweets/pastries 🥐 •Ever since I started taking nutrition classes I have been so conscious about what I am putting in my body (wich is a good thing) ,but being Super dooper aware can sometimes be overwhelming for your mental health 
This is why I listen  to my occasional cravings ! (I mean most days,you would put cake in front of me and I simply just wont feel like eating it: never force yourself!) But if im studying in a coffee shop and want a snack ,I won’t hesitate,since it is not something that I would eat on the daily. 
I am a huge believer That you need some balance in life. ️ And I especially like the 85 to 15 « rule » meaning you eat well 85% of the time so that If you feel like #treatyoself one day,you wont feel bad and your body will be on a nutrient-dense diet most lf the time,wich is super important for your overall health

Tonight I have a cookout with a bunch of other future RDs! I’m so excited to see what everyone else is making and chat with like-minded individuals  my contribution is this fresh three-bean salad using my farmers market green beans! I wanted to make a dish that most anyone could enjoy - despite diet preferences. I used a @bonappetitmag recipe that takes a nontraditional approach using fresh lemon zest, shallots, and dill! I love a nice crunch to my veggies and that’s exactly what this salad brings. It’s DELISH and I can’t wait to share!

I had thought about not sharing this, but that would mean filtering out the raw, not so pretty parts of being a new college graduate with big dreams and a shiny new job.  When you are working toward a goal, you feel like you are going somewhere in life. All of a sudden, I got to tick all the boxes off and I felt kind of lost. I felt like I didn’t know what I was doing or what I wanted- like I almost wasn’t good enough despite the years of hard work and passion. And it was so overwhelming. The desire to be good enough, to be successful, to fit into a mold and meet certain expectations. I felt exhausted, drained. .

I had imposter syndrome. 
And that’s when I realized I needed to take a step back from all the noise and reconnect with myself. I only used my phone for calls and texting and went on vacation with no cell service. I let myself be present, did things that make me happy and have found my way back to my purpose. There’s one thing that disconnecting has made me realize: it’s so important to be true to yourself. To do what feels right for you even if it may not be the “right” way for everyone else. You won’t find me posting pictures that are generic, cookie cutter types to get the most people to click on it. I’m here to share my story, and help anyone I can along the way in a raw, vulnerable and authentic way. If you’ve stayed with me this far, thank you  And if anyone has ever felt the same way, I hope my vulnerability has helped you in some way

....This is a good grab-and-go breakfast option if you struggle with having enough time to prep in the morning. I know when I’m at the hospital all day for rotations this is my “go-to” breakfast to keep me going. I just throw it in a mason jar the night before and grab it on my way out the door in the morning. Oats are high in the soluble fiber beta-glucan, which has many health benefits such as reducing cholesterol, controlling blood sugar levels, and increasing the feeling of fullness. The basic recipe I use for overnight oats is equal parts oats and unsweetened almond milk but you can play around with it and add other things such as nut butters, flaxseeds, hemp seeds, or greek yogurt to maximize the nutritional value

Summer nights call for ice cream !! I think I’ve had ice cream 3 times this week - a true sign of soaking in what is left of summer!! I find that I get bored of just eating one flavour, and I prefer to jazz up vanilla ice cream instead. Try this combo - French vanilla ice cream with local Niagara peaches, local blueberries and a smidge of balsamic vinegar. Good morning ! The other day I was scrolling through Instagram and I saw one of my fellow food bloggers post about her own almond milk. She said she could not believe the taste of homemade fresh almond milk! So I decided to try it out! I had it this morning with my @califiafarms unsweetened pure black cold brew and I was in shock from how fresh and yummy it tastes. It is such a simple recipe that you all must try it!! Soak 1 cup of raw almonds overnight in cool water. @nutsdotcom 
Transfer to a high speed blender with a dash of pink salt and 5 cups of filtered water. 
Blend on high for a few minutes. 
Transfer to a nut milk bag. I used @elliesbest and squeeze out all the milk. (Don’t toss your pulp!)
Transfer to a mason jar and store in the fridge and enjoy this fresh homemade almond milk for a few days :) Any ideas of what I can do with the extra pulp??! Dm me!!

I think I may not be alone when I say that going to the beach & wearing a bikini used to scare me...and I’ll be honest, it STILL does .
.
Even after reading everything that I have about body acceptance + positivity, it’s HARD to truly put that into practice. It’s hard for me to be confident and wear a bikini out to the beach. I find it so hard not to compare myself to others I see & to my own body as it was in high school, over 5 years ago. I have to remind myself constantly that bodies change & no matter what my nutrition/fitness goals are, my body deserves love and kindess ️ I want to be healthier not to lose weight, but simply to feel more comfortable in my own skin. I have a renewed love of working out + I’m finding my groove a little more each and every day

I am NOT saying that if I work out for x amount of months and lose x amount of weight I’ll finally miraculously be happy with my body & have no fears. That’s just not how it works 🤷‍️ I AM saying that no matter how much we may know about body love & positivity and shower it upon others, it’s still difficult to find that love and acceptance for our own bodies ‍️
Don’t compare yourself to anyone else. Aim to be healthy + happy for one person only- You. Don’t think back to a time when you were happier with your body because chances are you’re forgetting something that you weren’t happy with at the time. We criticize ourselves better than anyone else. But we are not meant to look alike or be perfect. God did not make us that way!

And just remember- the ONLY thing you need to have a beach body is just a BODY

ONE POT SPAGHETTI PASTA -

Very simple and hardly requires a recipe. It can also be customised to whatever you want to add. Here I did a simple tomato spaghetti. -

INGREDIENTS Half a pack of spaghetti (enough for 2 people and some left overs in my house).
One pack of cherry tomatoes - can use tinned just half the liquid. Couple of cloves of garlic sliced. Half an onion sliced in half moons
Half a pack of basil and a little fresh to add on top. 2 cups of water Dash of olive oil, salt and pepper to taste. -

Add all the ingredients to a fairly deep pot, add the cooking liquid and cook for 10 mins. Stir in Parmesan at the end if you wish (I did obviously 🧀). Enjoy!

ice cream for breakfast!? not quite but almost! i’ve been making this thick ice cream-like slushy thing for my sick self inspired by @intuition_4_nutrition basically just blend up some milk of your choice (i used almond), protein powder (i used @manitobaharvest plant protein) and ice and there you go. i threw in half a frozen banana and some hemp seeds too. use less liquid for a slushy product that you could eat with a spoon

This night we went with a Hawaiian style pizza, but you can truly dress this easy recipe up however you please (like sans the pineapple). Is Quebec City vegan friendly? 
I spent a week there at the beginning of the summer and while it wasn't the easiest, I found some great food 🇨🇦 In the toursity area of Old Quebec  it was more difficult; lots of fancy French restaurants (cheese cheese cheese). However, in the city, there are tons of vegan gems  so here's my little vegan guide to Quebec City⬇️  NESS is where I got this beautiful plate of zoodles; they also make juices and raw desserts!  @cafelescousins we got our morning coffee here and the barista gave us squares of dark chocolate when we asked for soy milk (vegan connections) @poutineville has a completely customizable poutine menu and vegan cheese!   @chocofavoris I had raspberry sorbet with a dark chocolate shell  I walked there every night for more. 🥗 @gourmandiseslouca is a vegan/vegetarian zero waste store and cafe for a quick bite  Taj Mahal is a family style Indian restaurant with a huuuuge menu and tons of vegan options

morning oats I usually like putting dark chocolate chips & peanut butter in my oatmeal but I had to improvise this morning 🤷‍️ Whole Foods has my favorite trail mix right now and it was pretty cheap (around 3.99 on sale)- 365 brand blueberry blaze. For the next few weeks I will be out of town so my instagram may be a little quiet. Now that I completed my internship and masters in sciences my focus is the RD exam and developing more recipes, meal plans, workouts, etc to share with you all! Hello all! Long time no post lol.. welcome to kittens and toast part 2- cone editionhere is my staple basic breakfast of a soft boiled egg, Dave’s killer bread, and 🥑 of course. I haven’t posted on here in so long because life kinda got hectic! I started a new job, an unpaid and very exhausting internship and I took 3 classes this summer! So not the most relaxing summer, but for sure a productive one! Summer is closing in a short 5 days and I start my junior year of college here in Houston! This semester should be a tad easier too as I’m not taking any chemistry classes, so I’m not overly concerned with my upcoming course load. Updates on my health: summer is normally a time where my old ED  thoughts kick in due to the pressure of looking good while in a swimsuit etc, but this year was dramatically different, I’ve never found my balance to be as in order as it has. I’m eating the most rounded, healthy, and fun diet that I’ve ever had! I never feel guilty for indulging, and I’m just so happy with my growth and life at the moment️ life is good people, happy back to school!!

Eggs and milk are great sources of protein that have a high biologic value, which means they have all the essential amino acids needed, and they are easily absorbed and utilized by the body. Plant based protein has low high biologic value because no plant source of protein contains all the essential amino acids needed by the body and it can be more difficult to digest and access.  However, if you're a vegetarian, you can combine specific foods (like rice and beans) to ensure you're meeting all your protein needs. -

Last weekend my boyfriend @nellboii and I were lucky enough to go paddle boarding for the first time ever in Key Largo (I’ve lived 20 min. away from the beach in Florida my whole life and have never paddle boarded)! We signed up to kayak but the guide talked us into paddle boarding because of the low tide.

It was so much fun and incredibly beautiful! We saw baby hammerhead sharks, a nurse shark🦈, hermit crabs, and a six legged starfish⭐️

Yesterday I heard someone say “intuitive eating is trial and error” and I just LOVED that. It’s so true! It’s easy to put pressure on intuitive eating and feel like if you eat intuitively you always “get it right” but trial and error is the name of the game! It’s all about learning and it’s a process!! There’s absolutely no right and wrong so try to learn and ride the wave of the process. And if a restaurant serves scones instead of bread pre meal- eat them if you’re like me and LOVE scones!

Y’all now that I’ve started making chia jam at home, I don’t think I’ll ever go back to store bought jam/jelly! It’s so easy to make - cook down some berries, add stevia or honey (optional) then add 1 Tbsp chia seeds and let it cool - that’s it! 🤷‍️ so yummy on toast, yogurt bowls, & oats  .

my daily dose of happiness  // anyone else get excited for their morning routine? as part of my new year’s resolution, I made a goal to create a better morning routine. I used to roll out of bed and get ready quickly before taking off for work. now, I give myself time to set the tone for the day. my routine consists of water, coffee (either with almond milk if I’m out or I like to make cashew milk for a creamier texture!), movement + stretching, @calmappofficial, getting caught up on my emails and then getting ready. this past year I also started listening to 1-2 podcasts a day while I get ready & i love it! it’s seriously my favorite time of the day now! ++ happy Wednesday ️

Think about some things that you do every single day: brush your teeth (hopefully), move your body, scroll through social media, eat a type of food, drink some form of liquid, drive in your car, hug a loved one, listen to music, watch TV, etc etc. Whatever it is that you consistently do on a day to day basis become your behavioral patterns that are actually imprinted in your neural pathways via repetition

Whenever you want to change in your life (lose weight, exercise more, waste less food, organize your finances.... whatever it may be) the 1️⃣ first thing you have to do is take a step back & objectively [read: WITH. OUT. JUDGEMENT.] look at your habits right now, as they are. Write them down. See them on a list. Things you do every single day.

This form of self-analysis allows you to pin point your unique behavior patterns. It is the  to forming new sustainable lifestyle changes. I’m thinking about exploring this topic in more detail as it pertains to nutrition & exercise via a mini series - comment a  if you’d be interested and if you have a particular struggle/confusion when it comes to forming new healthy habits

This morning I kicked off the day at @friendshipcrossfit for a good sweat with some friends before heading to Dublin’s farmers market.. in the rain  but I made it work! After, I whipped up a savory waffle breakfast sandwich using @kodiakcakes buttermilk waffle mix (adding salt, pepper, shallot and thyme seasoning) and it was delish! Tip: after making the waffles, toast in the oven on broil for a few minutes to make them crisp!!
.
Topped mine with @wellshire paleo bacon, thick sliced garden tomato, avocado, mixed greens and a fried egg!

 Craving spice! I made these paleo buffalo chicken meatballs to help the cause. Sittin pretty alongside simple sautéed spinach, baby heirloom tomatoes and bell pepper in avocado oil.

Buffalo Chicken Meatballs:
1 pound of organic ground chicken 
1/4c Franks hot sauce (the original, not buffalo - this includes certain ingredients that are not paleo friendly) 
1/2c almond flour 
1/4c diced white onion
3 fresh minced garlic cloves
1 egg
Salt & pepper
.
.
Mix ingredients and cook in a hot oiled skillet until bottoms are seared. Pop in the oven on 400 until cooked through! .

For brunch I diced up some sweet potato, sweet onion, honey crisp apple (trust me), red pepper, @simpletruth4u bacon, and tossed them in avocado oil, salt, pep, thyme and roasted for ~45 mins on 450. I cracked 3 @vitalfarms eggs over the hash and popped it back in until eggs cooked through! Savory and sweet is my favorite breakfast combo

Paleo Peach Cobbler!

I needed something to do with the 50+ peaches I got from the Georgia Peach Truck last week so I decided to whip up some comfort food  .
.
Peach Layer:
4 large peaches - pitted, peeled and sliced.
1 t of cinnamon
1 T coconut sugar 
1 T coconut flakes
1/2 t of arrow root or tapioca flour (used as a thickening agent)
Mix ingredients and place into a lightly oiled cast iron skillet (or baking dish!)

Cobbler Layer:
1 cup unsweet almond milk
1 T cinnamon 
1/4 cup melted coconut oil
1 t vanilla 
1 cup almond flour 
1/3 cup arrow root or tapioca flour
1 t baking powder 
Pinch of sea salt
.
Combine ingredients until well blended and then place spoonfuls of mix over the peaches. Bake at 375 for ~25 minutes, and finish with a minute broil to make the top crispy!

Tossed a chicken breast in olive oil, salt + pep, and a Greek seasoning blend. Grilled it alongside some yellow squash I picked up at the farmers market last week.

Salad base is a mix of greens tossed in olive oil and lemon juice and topped with yellow heirloom tomatoes, cuke and bean sprouts! Drizzle of homemade tahini dressing (check a few posts back to get that recipe!) Have a great weekend! 🤙
