Slaying out some Lanzhou Beef Noodles this week. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
What is that?
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀
A typical Lanzhou beef noodle soup has 5 aspects to it. First, being the clear broth, ours is milky from boiling beef knee cap, brisket and femur bones and chicken bones with similiar spices such as szechuan peppercorns, fennel seeds, cinnamon stick, star anise, cardamon, cumin and dried chili as found in the traditional Lanzhou Beef Noodle. Second, an element of white, in ours we have put in white radish kimchi, one signature techniques of Morsels. Third, red is in the form of red chili oil, we make our sate chili from scratch. Fourth, it needs to have green, usually in the form of coriander and garlic chive, we made ours into a pesto with delicious wagyu fat which adds a whole load of flavor into the broth. Fifth, it is usually served with yellow noodles. We decided to use Thai rice stick noodles instead. All the beefy components include, Taopok stuffed with minced beef brisket and wagyu fat, grilled 1824 Beef Flank, and beef balls.

Have you tried our umami laden warm salad? ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀
In our small plates section of the menu, you will find this umami Burnt Red Cabbage. First we marinate it in a paste with aka miso, then its charred on the plancha to give you that sweet bitterness. The greens are made up of a couple of leafy vegetables from Cameron Highlands, such as Nai Bai, Baby Shanghai Greens, HK Kailan, Indonesian Watercress, all tossed in an umami kombu butter. Maitake mushrooms are then lightly seared on the plancha to bring in the earthiness. Konnyaku we cook first in our special umami marinate and finished on the plancha. Lastly, the sauce, is a homemade black goma dressing.

Demystifying kitchen lingo: a la plancha, is a method of cooking we use quite a fair bit @morselsinsingapore: high temperature searing with a little smoke on a flat griddle. Works great with seafood, meat, vegetables where you want the produce to shine. Cooked fast on the outside and still soft and raw on the inside. Of course, with a lot of flavor. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
