There’s a misconception that it’s time consuming and difficult to make healthy, nourishing food. And while I do sometimes spend hours in my kitchen creating and preparing (because I thoroughly enjoy doing so), more often than not my meals take no more than 15-20 minutes to prepare. 
Whole, nourishing foods are right at our fingertips, yet often times we can be sucked in by packaging and marketing from brands selling highly processed, prepackaged, overpriced foods, or fast food restaurants marketing how convenient it is to drive thru on your way home from work. 
There’s no hiding that it takes some planning and preparation to eat healthy and clean, but the benefits on the mind and body outweigh any marketing scam tenfold. 
For these cabbage boats, I peeled off the outer layers from a head of purple cabbage, filled them with some sautéed Japanese sweet potatoes + dino kale + zucchini, and topped them with homemade almond pesto (recipe is on my blog) + avocado + broccoli sprouts. Luteal phase on fleek y’all 
No need to make it complicated or stressful. 
Keep it simple, colorful, and whole

I have been vegetarian since 1998 but could never seem to pull the trigger on going vegan despite being well aware of the ethical considerations of factory farming.  It was always something I was going to try soon and then 20 years went by. I was diagnosed with PCOS (polycystic ovarian syndrome) in 2008 but never investigated a plant based diet to manage it. It's time. One hormonal imbalance leads to another and another. I have been feeling like absolute garbage for a long time now. In addition to menstrual woes, I'm exhausted but can't sleep, can't think, have terrible skin, chronic congestion, troubling digestion, weight gain, and everything hurts. My body is telling me it's breaking down. For the first time I'm focusing on the root cause instead of just painting over the mould by addressing symptoms with a scattershot of medications. Doctors just shrug because my blood work is normal but feeling like this isn't normal. I don't accept that.

I'm eliminating one thing at a time and started with dairy. (You can google how dairy affects millions of adults). This is my fourth day dairy free and I feel terrible. My insomnia is even worse! Hence the black coffee without my usual milk and sugar. I know it can take a few weeks to get dairy out of your system. I know it will take a good while for my gut health to improve. I know how to eat plant based in a healthy way and have the support of my family and a Naturopath. I'm committed to using food as medicine, but I'm struggling right now. For some folks going vegan isn't a switch that can be easily flipped, for a whole variety of reasons. Giving myself grace to hate it in the moment and hope for the future.

@simpleishliving Good luck! I’m more of a “slowly phase” things out type of person. I used to eat dairy multiple times a day every day, but now I probably only consume it once or twice a month. And that’s only when eating out with friends. Hopefully soon I can phase it out completely. Good luck ☺️ hope you feel better soon

Seriously though, there were some tedious bits to this recipe, but worth making again with a few tweaks to up the flavors. I grabbed it out of the most recent issue of @rachaelraymag. It was pretty simple with lemon, lime, orange, serrano pepper and avo oil. Underneath is baby bok and red peppers. I left a plain piece of salmon on the side for the Andrew, Katie boycotts salmon night so chicken fingers for her and they all had @seedsofchange_us brown rice & peas.

If there’s one thing I’ve learned about cooking for my fam is it’s ok to do one fancy thing, but that’s the limit. Make the rest of the meal as easy as possible, otherwise you’ll stress yourself out. Ain’t nobody got time for that! 
.

Happy Monday! 
I decided to start the week palatable so I brought you my favourite recipe, a Carrot Mushroom Casserole 🥘 
Ingredients:
500 g champignons 
200 g grated/finely sliced carrots 
100 g grated cheese
any kind of pasta (I prefer the chinese Chow Mein)
2-3 tbsp of olive oil
1 cup of water
2 pinches of salt
1-2 tbsp of chopped parsley
.
Cook the carrot and peeled, chopped mushrooms in the olive oil and water, add some salt and the parsley to get the proper taste. Cook the pasta too, then get a casserole and start to put the food together. Lay pasta first, add half of the carrot and mushroom mix, then as a last layer, put cheese on the top. Repeat. When ready, put in the oven (or microwave) until the cheese melts. Consume with soy sauce and joy

My thoughts in short: recipe testing is a learned skill that requires a lot of patience and perseverance and I’m still in the middle of that learning process. Over the weekend I came across an awesome article (thank you @yoga.soul.style) written by a man who suffered from extreme anxiety and eventually turned to medicinal breath work (link to article in my bio). •

Not a second after I finished reading, did I open my email to a pharmacy newsletter entitled: antianxiety drugs are fueling the next drug crisis in the US (also linked in my bio). •
.
The juxtaposition was ironic really. It actually sums up my day-to-day life, both personally and professionally. •
.
There’s a definitive struggle between traditional medicine and alternative medicine. Like somehow they can’t coexist or one can’t be a bridge to another. •
.
Making matters worse most chronic conditions dealing with hormone health & mental health go under reported, under diagnosed and are pushed aside. •
.
What’s the point of this rant? I suppose it’s awareness. It’s for the person like me struggling with a multitude of issues that went undetected by your average tests and was simply offered an antidepressant prescription by a general practitioner. It’s for the person struggling for answers, but due to an inundated health care system, can’t seem to find any. It’s for you. •
.
Seek out those that understand and don’t just nod and look at markers on tests to determine your outcome. Fight. Talk. Challenge the system. Heal. •
.

A little while ago in the mid of my exams I talked about adrenal fatigue and what you can do to heal your adrenals naturally. 
It's totally possible to have an adrenal burn out outside of exam season as well , caused by other stressors that might not be in your control.

Your adrenals are 2 small glands that sit atop your kidneys and produce cortisol and sex hormones. In many ways the HPA axis and the adrenals are the command and control center for your body, and they help you manage your stress levels, hormone levels, thyroid function, sleep, sex drive, and metabolism. When everything is functioning normally, you have good and stable energy throughout the day, you sleep well, you have a good sex drive, and you maintain your weight.

It's especially important for women who struggle with a hormonal imbalance or if you're like me with PCOS to support their adrenals. It's one of the 4  protocols to healing your hormones , you'll know what I'm talking about if you read Women Code - by Alissa Vitti @floliving.

If you’re a woman, you may start to have irregular cycles or a worsening in PMS symptoms because your body is starting to borrow molecules of other hormones, like progesterone (one of your main female hormones), to make cortisol. Your body perceives that survival is more important than reproduction, so women notice infertility or cycle irregularities. Your body knows a stressed environment is not ideal for creating a baby! This lack of progesterone can leave you estrogen dominant.

 So what's the actual signs that you might have to nurture your adrenals because they are beginning to falter ?

• fatigue
• weight gain
• digestive issues such as bloating, constipation, diarrhea
• sugar and/or salt cravings
• the “3pm crash”

Has anyone else been having vivid dreams the last few nights? ‍️

This weekend I had incredibly detailed dreams. People from my distant past as well as my present, and quite possibly my future made appearances. When this happens, I take stock of the stage I’m at in my life and what this could mean for me.
.
In one dream I stood up for myself to someone who hurt me deeply in the past, in another I spent time with a departed friend, and in yet another I offered comfort to a friend experiencing their own pain. I believe these dreams show me how far I’ve come in life, but also certain areas I need to focus on as well.
.
My confidence is growing. My intuition is strong. But I think this is also a call to go deeper for me spiritually and connect with God and spirits around me.
.
This morning I said a prayer to God and to my friend  reminding her how much I love her and how I’m inviting her to join me on all my adventures through life. And that truly, she has been a catalyst for change in my life in so many ways— especially my “why” as a Health Coach. My family, friends, and health come first. These are the priorities in my life, and I refuse to sacrifice them in order to please someone else, an employer, or otherwise. ️

I know, kind of deep for a Monday  but I’m all about living with the flow of life, and this is where it’s taking me today

Diving headfirst into Monday after a long weekend away the only way I know how: with a fatty smoothie bowl and a big ol slab of @eatingevolved midnight coconut chocolate 🤤. Chocolate comes from a cacao tree so it’s basically a vegetable 🤷‍️. I’ve been experiencing some serious brain fog these past two days which happens when my body is out of its normal routine 🤯. I’m in my luteal phase right now so I’m focusing on root veggies, strength training and resisting the urge to pick at my skin if I break out! Our skin is most sensitive during this time and will most definitely just leave red hyper-pigmentation if you do!⠀

This dinner has sweet potato and sweet onion to combat sugar cravings, broccoli for greens, chickpeas for fiber and protein and EVOO with spices for flavor and stabilizing blood sugar. Just bake at 375 for 35-40 minutes! Easy and yummy.

there's nothing better than starting a week with a heartwarming nourishing breakfast 🥣. after a weekend spent with hiking  and enjoying nature i prepared some buckwheat yesterday so i could have it for breakfast . i added some cinnamon spiced apples, pumpkin seeds, hemp seeds and nut butter of course  check my stories to see more one of my biggest learning of the last weeks is: preparation and organization is key for a healthy lifestyle  ️working on a weekly meal plan

️schreibt einkaufslisten, das spart geld und hilft euch, keine ungesunden spobtankäufe zu machen ️kocht so viel essen wie möglich am wochenende vor, das spart so viel zeit im ohnehin stressigen alltag

I rarely use anything other than a nut milk to make my smoothies so to be honest I was kind of skeptical about how this would taste. 🧐

LET ME JUST SAY...totally going to put this creation in my rotation. Also, #mojococonutwater is literally the best tasting coco water I’ve ever had. I can usually only drink coco water mixed with lemon and a bit of salt, but this was so delicious straight from the can.

I picked this up on a whim to have in the fridge a couple of weeks ago at McCaffrey’s, guess I’ll be going back for more!

Here’s my blend (it’s really my go-to cacao smoothie with a slight twist) • 
1/2 c cherries • 1/2 c riced frozen beets • 1/2 c riced frozen cauli • 1 & 1:2 tbsp cacao powder • 1 scoop
collagen powder • 1 tbsp 
sunbutter • handful frozen spinach • pinch of pink salt • 1 can refrigerated
Mojo coconut water • blend and enjoy!

I looked at this photo and immediately thought, “Wow my legs look amazing!” which is something I have never, not once, thought in my life.

Discontent towards my thick thighs was instilled in me as far back as i can remember. I remember telling the beau, upon learning that he was a legs man, that he should cut out now because I’d never have nice legs. Earlier this year, I cried to my therapist about wanting to a accept them but HATING the chub rub. Just last week, I hid behind a trash can to reapply anti-chafing because I felt ashamed that I needed it (even as the rest of the group, womxn much thinner and much heavier than I) complained about their chafing. I’m slightly embarrassed to admit that i went through an entire bar of that stuff in a month.
.
In reality, it means I’m wearing lots of skirts and shorts and living my damn life. Embracing summer. Embracing myself.
.

And I thank universe every single day for leading me to this path because I was able to put my PCOS IN REMISSION.  Through diet and lifestyle changes, I HEALED MY CYSTS. And one day, I hope to start a family without the help of medication. ⭐️️

PCOS affects approximately 15-20% of women worldwide - and about 50% of those women are undiagnosed! It is THE MOST COMMON endocrine disorder for women of reproductive age. I know there are definitely some PCOS gals out there who can relate [holler at me if you do!!!]. While everyone is different and every situation is different, please know that medication isn't your ONLY option. You have the power to heal yourself through food and lifestyle choices! I have become so passionate about this topic that I am currently enrolled in the Hormone Health course @nutritionschool [ @carlybeyar just graduated from this course as well!]. My ultimate goal is to help ladies like myself who struggled with PCOS and empower them to take back their health!

NOT a baby but you could definitely be fooled with the bloat going on here️

I got my period for the first time since the winter! I lost my period during my 2nd semester of my 1st year of naturopathic medical school. At first I thought it was due to stress but when it didn’t come back after I finished final exams I started to get a little more concerned. 🤔
.
I have never had a regular period. I was put on the birth control pill initially for my skin & then to regulate my period. Last August, I decided to go off the pill. Which was kind of scary because I am not ready for baby Lau’s just yet & was also not educated in alternative methods to the pill.  I ended up getting my period regularly after going off of it to lose it several months later. Long story short I have been educating myself as much as possible in natural ways to prevent pregnancy & regulate hormones. . .

One book I think needs to be given to young girls in school is “Taking Charge of Your Fertility” by Toni Weschler. This information needs to become more mainstream. There are definitely alternative ways to  prevent pregnancy, balance your hormones, improve hormonal acne, regulate your period, boost fertility if you’re trying to conceive, improve PCOS symptoms, etc. Nothing against the pill or whatever you choose to you. I am all about doing YOU. I just think we need to be adequately informed before making some of these important decisions that may affect us in the long run.

As for this picture. I’m sharing it because I am so PROUD of this bloat!
.
To be honest, it’s not crazy painful (thanks to the 1 tsp of fish oil I’ve been having each day) it’s just super distended. I am so grateful for my body & it’s ability to actually HAVE a period. This bloat is just a reflection of the hard work happening in my uterus right now & I am proud to flaunt the bloat. .

Making sure I give my body lots of love, water, & nutrients to help it flow through this state with as much ease as possible

This Friday Fave is going out to my favorite thing this week...riced beets! ‍️

I’ve been on the riced cauli in my smoothie train for a while now, but i’ve also seen people put roasted frozen beets in their smoothies. ME: always looking for a time saving method...FINDS riced beets!  ⏲
.
Consensus is that you should steam then freeze any veg before using in them smoothies to make them easier to digest, I do NOT do that and find my smoothies A OK on my (always sensitive) belly. 
.
Beets also help your liver detoxify excess estrogen during your cycle. Adding them around ovulation with other raw fruit and veg (more estrogen detox) will help keep those lovely PMS symptoms (bloating, cramping, moodiness) to a minimum. 
.
What’s in my cup? 
.
1/2 cup riced cauli/sweet potato mix • 1/2 cup riced beets • 1/2 cup frozen cherries (blueberries work well too) • 1 tbsp cacao • 1 scoop collagen • 1 tbsp sunflower nut butter (or your fave nut butter) • pinch of pink salt • milk of your choice to desired consistency • blend and enjoy!

Don’t get me wrong, I’m all about bio-individuality and understand that everyone’s body needs different things to run well, but this style of eating is keeping me fuller longer, and I’m not worried about spiking and crashing my blood sugar. This salad is an excellent example— it has:
Grilled chicken (protein)
Avo (fat)
Radishes, Jicama, and Peas (fiber)
Arugula (greens) I topped it with a delicious pesto and called it a day!

This is already pretty close to the way I eat day to day, but having a little reminder to get more fat/greens/protein/fiber on my plate at every meal has been helpful, so I’m sticking with it for now! #fresherica

Happy Book Lovers Day 

Personally, I've been working hard (probably could always work harder) at unplugging and picking up a book. I am a person who loves loves loves a physical book rather than an ebook, etc. I love marking the pages, bending the corners, going back and re-reading my favorite parts.
I have my favorite Christmas books I read every year, my favorite series, stories that transport me to places I can't get to in reality, even self help books!

Right now I'm reading the 3rd book in a airy, country series I've been casually reading over the years - it's called The Mitford Years by @jan_karon
As well as Woman code by @alisavitti

What are you reading? How do you escape?

Cauliflower gnocchi to the rescue last night.

I had a 1/2 hour to make dinner (for all), get ready and head out the door last night. You know what that meant ... P A S T A. 
.
I threw together cauli gnocchi for me (full recipe a few posts back) with leftover pesto and the fam had farfalle with @raoshomemade marinara and a side of peas (frozen food saves mom again!). 
.
I know it’s not the most complete meal, but I had a snack of leftover cold grilled chicken slathered with @traderjoes mixed nut butter not too long before. 
.
Am I the only weirdo that loves the chicken & nut butter combo (please tell me I’m not). 🤷‍️  or 🤢
