Custard Cream Biscuit Cake ⠀

INGREDIENTS:⠀
2 packets custard cream biscuits⠀
⠀
BUTTERCREAM:⠀
400g white chocolate⠀
550g softened butter⠀
550g icing sugar⠀
⠀
GANACHE:
250ml double cream⠀
400g white chocolate⠀

GANACHE GLAZE:⠀
250ml double cream⠀
65g golden syrup⠀
350g white chocolate⠀
1 tsp vanilla bean paste⠀
75g unsalted butter, cut into cubes and chilled⠀
White chocolate shavings, to serve⠀
⠀
STEPS:⠀
Melt the white chocolate in a bowl over a pan of barely simmering water. Beat together the butter and icing sugar, then beat in the white chocolate. Set aside.⠀
To assemble- Line the bottom of a 20cm springform tin with parchment paper. Working carefully, spread a thin layer of white chocolate buttercream on a biscuit and place around the edge of the tin. Repeat this until all biscuits are used, creating a spiral of cookies and frosting. Top the cookies with a layer of white chocolate buttercream and place in the freezer for up to two hours to set the buttercream. Remove from the freezer and remove the springform pan. Cover the cake completely with the remaining white chocolate frosting. Set the cake in the fridge for 30 minutes to set.⠀
Make the ganache- For the ganache put the cream and golden syrup into a medium saucepan and bring to a boil. Put the chocolate in a heatproof bowl and as soon as the cream is boiling, pour over the chocolate. Leave for 1 minute. Using a whisk, mix from the middle of the bowl, in small motions, to incorporate steadily more cream into the chocolate. If you don’t whisk like this, the mixture may split. Once all the cream has been incorporated, add the vanilla and butter. ⠀
Let to one side for 20 - 30 minutes until thickened but still pourable.⠀
To glaze- First, ensure you have a cold cake. Also, make sure the sides and tops are completely smooth. Any dips, bumps, or imperfections will show in the final result. ⠀
Place cake over a cooling rack and pour ganache to cover the cake. Allow ganache to set for 30 minutes and place on a serving platter. Pipe a border of the remaining ganache around the top and bottom of the cake. Top with chocolate shavings and serve. The cake will keep up to 3 days refrigerated.

INGREDIENTS: ⠀
6 ounces cream cheese, room temperature⠀
1/4 cup unsalted butter, room temperature⠀
1 (5.3-ounce) OIKOS Toasted Coconut Yogurt⠀
1/2 cup heavy cream⠀
2 teaspoons vanilla extract⠀
7 large eggs, separated and at room temperature⠀
1/4 cup all-purpose flour⠀
Zest and juice of 1 orange⠀
1/4 teaspoon cream of tartar⠀
1/2 cup sugar⠀
Powdered sugar for garnish⠀
⠀
STEPS: ⠀
Preheat the oven to 320 degrees. Spray a 9-inch springform pan with nonstick spray.⠀
Heat a medium saucepan filled with water over medium heat and place a bowl on top to create a double boiler. Add cream cheese, unsalted butter, yogurt, cream and vanilla. Heat until melted and stir to combine. Remove from the heat. Beat with a hand mixer to remove any lumps. Continue beating in the the egg yolks, one at a time. Sift the flour into the batter, add orange zest and juice and blend together. ⠀
Add egg whites to the bowl of a stand mixer, and sprinkle with cream of tartar. Using a whisk attachment, beat until the egg whites become foamy then start to add sugar a little at a time. Once all the sugar has been added, increase the mixer speed to high and beat until firm peaks. Fold the egg whites into the cream cheese mixture in batches. ⠀
Pour the batter into the cake pan and tap a few times to release any air pockets. Place the cake pan into a larger pan and add water until it reaches halfway up the pan.⠀
Bake for 70 to 75 minutes. Turn off the oven, open the door slightly and allow the cake to cool for 15 minutes in the oven. Remove from oven and let the cake cool to room temperature before serving.⠀
Dust with powdered sugar to garnish.

Make it a hearty meal with slow cooker pot roast

Nutella Pull-Apart Bread⠀

INGREDIENTS:⠀
100g unsalted butter, at room temperature⠀
500g strong white flour⠀
1 x 7g sachet of instant yeast⠀
7g salt⠀
40g caster sugar⠀
230ml milk⠀
2 large eggs⠀
400g Nutella⠀
100g chopped hazelnuts⠀
100g royal icing sugar⠀
3 tbsp water⠀
⠀
STEPS:⠀
Place the butter and flour into the bowl of a stand mixer and mix until fairly well combined. Add the salt and mix. Heat the milk very gently until lukewarm and take off the heat. Add the yeast and sugar and add to the dry mixture, adding the eggs at the same time. Mix on low with the dough attachment for 5 - 10 minutes until the dough has become silky and smooth. ⠀
Transfer to an oiled bowl, cover with cling film and let the dough rise until doubled in size (about an hour, but up to two). Gently push down the dough, turn out of its bowl and roll out into a large rectangle, about 45cm x 30cm.⠀
Preheat the oven to 350F. ⠀
Spread Nutella over the rolled out dough and sprinkle with hazelnuts.⠀
Cut the dough into 4 lengthways and place lengths on top of each other.⠀
Then cut into 8 squares. Place squares into a loaf tin, cover and allow to prove for 35 - 40 minutes or until nearly twice their original volume. Brush with milk then bake for 30 minutes.⠀
Meanwhile mix together the royal icing sugar and water to form a paste with a drizzling consistency - you may need to add water to achieve the right consistency. Take the rolls out of the oven and drizzle with the icing.

Zest of 1 orange⠀

STEPS:⠀
Place the duck breast into a shallow tray and cover with salt, making sure the underside is completely covered too. Cover the whole tray with plastic wrap and leave at room temperature for 24 hours. Remove the duck from the cure and wipe clean of all salt.⠀
Roll the breast in the black pepper and orange zest and then wrap in muslin, tied with string, making sure the breast is completely covered. Weigh the muslin-wrapped duck breast and work out what weight the breast would be once it has lost 35% of its whole weight—this is how much water weight it needs to lose in order to be properly cured—and write it on the muslin somewhere. (Doing it this way means you don’t have to keep unwrapping the duck breast to weigh.) Leave the duck breast in the fridge for about 3 weeks, or until the right weight is reached.

My 2 favorite low-carb soups! Broccoli cheddar soup 🥦🧀 is more calories and fat, so it may seem unhealthier at first, BUT it is also wayyyy more filling!  It’s the one I generally prefer to a more broth-y soup - which I’d have a eat a really large volume of, and also have a serving of fats on the side (like nuts or cheese) in order to stay satiated

Homemade Milk Caramel ⠀

INGREDIENTS:⠀
4 cups milk ⠀
2 ½ cups sugar⠀
1 teaspoon baking soda⠀
⠀
STEPS:⠀
In a Dutch oven on medium to high heat, add the milk and sugar. Lower temperature to low heat, and continue to stir.⠀
When it starts to lightly boil, add baking soda.⠀
The milk will begin to evaporate and the mixture will thicken and turn a rich caramel color.⠀
After about 1 hour, stirring from time to time, so that it does not stick to the pot, remove from heat.⠀
In a large mixing bowl, pour caramel sauce and with an electric mixer, beat until thick and creamy texture.⠀
Store in tightly sealed jars.
